Initially, Gyuto (Gyuto), the so-called cow sword, was developed for cutting large pieces of red meat (according to the name, most likely, beef). It differs from 2024 the western utility knife with a thinner blade and, traditionally, harder steel; Gyuto also has a more Japanese version of Wa-Gyuto - with an elliptical cross-section handle with a longitudinal rib, familiar to the inhabitants of the Land of the Rising Sun
High quality n690 tool steel. Hardening up to 60-61 HRC.
Micarta overlays with the "Broken Stone" pattern have shown themselves to be very convenient and comfortable material during long-term use.
